Bulgur wheat with preserved lemon and apricot (contains gluten).
Chickpea with cucumber, tomato, red onion and coriander. dressed in lime.
Greek - olives, cucumber, tomato, fresh pepper and red onion in a balsamic, olive oil and oregano dressing.
Sweet potato in a tahini dressing.
Slaw - shredded courgette, carrot and cabbage with cashew nuts and a tamarind-thai dressing.
Butter beans dressed in garlic, parsley, olive oil and red wine vinegar.
Kale with spinach and olives tossed with fresh herbs, spices and lemon.
Quinoa with black beans, sweetcorn and coriander in a spicy, citrus, mexican style dressing.
Green beans dressed in garlic and olive oil.
Green lentils with tomato, cucumber and red onion with fresh herbs and a mustard and lemon dressing.
Top with a choice of feta, mozzarella or vegan cheese
